As temperature increases, there's a phase change between solid and liquid, and another between liquid and gas. You've got to hit the sweet spot. Here in AZ, there's lots of gas (at least at my house there is). That's also why Mexican food often has the notorious effect it does.

When solids go directly to gas it's called "sublimation".
