Ebauchon shapes

I am new at pipemaking - just completed #5 and am curious as to why ebauchons are always pictured with the sloping side downward and the long side on the bottom. The description says it is good for small straight pipes or 1/4 bents. I have simply flipped the block over so the long side is on top and have made 3/4 bents. What is it I don't yet understand?

Nothing, you can use the block however you wish, the description is simply the most common way they are used.

I think the info you are missing is that some ebauchons are cut "M" type and will basically only do a straight pipe where what you are buying is "R" type and there's more material (=more flexibility) in those. But no matter what, you are free to cut whatever you feel you can in whatever orientation you think will work.

You don't understand the difference between a bent with nice curves, and a bent with awkward curves.
The example on top is nice, the example on bottom is awkward.
